Spinach Salad & Poppy Seed Dressing
This recipe comes from my Sister who got it from BYU-Idaho. I remember when I went to school there and going to one of eateries on campus and getting this salad often. IT IS AMAZING! Spinach, poppy seed salad dressing, candied almonds, mandarin oranges, cured turkey bits and swiss cheese. Yummmmm.
Poppy Seed Dressing:
3/4 T. poppy seeds
3/4 c. vegetable oil
1/4 c. grated white onion
2 T. prepared yellow mustard
1/3 c. white vinegar
1/3 c. white sugar
3/4 t. salt
Mix all ingredients in blender until well blended. Chill until ready to serve.
Spinach Salad:
spinach
grated swiss cheese
bacon, cooked and crumbled (you can also buy cured turkey bits that taste similar to bacon or you can also cut up some deli ham and cook it in a pan till it's cooked through)
mandarin oranges, chilled
I didn't put certain measurements on the salad ingredients because it's truly up to your own taste how much of everything you want.
Candied Almonds:
1 c. sliced almonds
7 T. sugar
Mix almonds and sugar together in pan and cook on medium heat. Stir, stir, stir until sugar starts to melt and combine. Keep a close eye on this or it will burn.
Combine salad ingredients, almonds and dressing and enjoy!
