Mint Chocolate Ganache Cookies

I made these cookies tonight from the blog Six Sisters' Stuff and they turned out fabulous! Very rich but very good!

Cookies:
1 Devils Food Cake Mix
2 eggs
1/2 c. oil

Peppermint Frosting:
2 c. powdered sugar
1 1/2 t. peppermint extract
1/2 c. softened butter
2 T. milk
* food coloring optional - love the fact you can change the color to whatever holiday/event you are making them for!

Chocolate Ganache:
1 c. semi sweet chocolate chips (milk chocolate would be amazing too)
1/3 c. butter

Preheat oven to 350 degrees. Line cookie sheets with parchment paper. In mixer combine eggs, cake mix and oil, blend until combined. Drop by spoonfuls (I think the smaller the better, then they can be bite sized little nuggets of goodness!) and bake 7-9 minutes. Let cool completely. For peppermint frosting combine powdered sugar, mint extract, softened butter, milk and coloring dye and beat until combined. Frost cooled cookies. For ganache heat chocolate chips and butter in 20 second intervals in microwave safe bowl. The recipe called for 2 1/4 c. chocolate chocolate chips and 3/4 c. butter but that made way too much so I revised it for next time. Enjoy!
