Lime Coconut White Chip Macadamia Nut Cookies


I had a luau with my family the other night and I just felt like baking.  So I checked out Our Best Bites and found these delicious cookies.  I promise that you will feel like you have been transported to the Caribbean.  You can taste every flavor in these cookies and the combination is amazing! Highly recommend!

Lime Coconut White Chip Macadamia Nut Cookies:
2 c. flour
1/2 t. baking soda
1/2 t. salt
12 T. unsalted butter melted and cooled until luke warm
1 c. brown sugar
1/2 c. white sugar
1 large egg + 1 egg yolk
2 t. vanilla extract
1 c. white chocolate chips (I am telling you Ghirardelli is the best!)
1 c. toasted coconut
1 c. toasted macadamia nuts
1 T. grated lime zest (about 2 limes)

Heat oven to 325 degrees.  Melt butter so it has a chance to cool.  Combine flour, salt and baking soda together in medium bowl; set aside.

With electric mixer, mix butter and sugars until thoroughly blended.  Mix in egg, yolk and vanilla.  Add dry ingredients; mix until combined.

Add white chocolate chips, coconut, macadamia nuts and lime zest.  Mix to distribute.

Proceed to eat a spoonful of dough and sit back, relax and pretend you're on the beach.

Scoop cookie dough into balls and place on parchment lined baking sheets.  Bake until cookies are set around outer edges, yet centers are still soft and puffy and appear slightly under-baked, about 9-10 minutes (I think lesser is better).  Cool and then enjoy!

* Tip - To toast coconut and macadamia nuts spread out on cookie sheet and bake at 325 degrees for 6-7 minutes.  Cool completely before mixing into cookie dough batter
